How to Make Homemade Pasta (Pici)
Homemade Pasta (Pici) with Pecorino and Pepper Our chef Alberto shows you how to prepare Pici (a thick, hand rolled pasta — like a fat spaghetti) with cheese and pepper. The ingredients we need for Pici are: 500 gms of plain flour An Egg 250 ml of Lukewarm Water (Approx) Extra Virgin Olive Oil Pecorino Cheese Fresh ground pepper This starter dish serves six individuals. Instructions: Pour 500gms of plain flour in a bowl along with a pinch of salt. Empty the contents of an egg into the bowl. Mix it well with a fork as you add water until we get a dough consistent enough but soft enough so that we can roll it with our hands. Just in case if the dough is too hard or soft, we’ll add water or flour accordingly. View how our chef works with the flour. Cover the dough with cloth for an hour. Take pinches the size of a hazelnut from the dough. Start rolling by hand until we have a thick spaghetti. Toss them in dry flour to avoid sticking. Boil water and add salt. Add the Pici. Stir them so that they do not stick with each other. Cook them for 3-4 (three to four) minutes. In the meanwhile, add olive oil to the pan. Place the cooked pici in the pan. Add Pecorino cheese using a sieve. Add pepper. Mix them well. When it the pan is removed from the stove, add more Pecorino cheese and pepper to taste.
